Italian Cabbage and Fennel Salad

This salad is so simple but has the most adorable flavour. The crunchy cabbage and fennel surrounded by a smooth velvety dressing makes for a wonderful taste sensation. This salad can be served with many dishes and also makes a great replacement for coleslaw.

INGREDIENTS

1 small bulb fennel, sliced

1/2 head small white cabbage, shredded

1 tablespoon fresh chopped basil

3 tablespoons capers

Handful chopped black olives

4 tablespoons lemon juice

2 tablespoons extra virgin olive oil

1 clove garlic, minced

Salt and pepper to season

METHOD

Mix all of the ingredients together in a bowl being sure that all the ingredients are well mixed.

Place in the refrigerator for 30 minutes allowing for the flavours to develop and the cabbage and fennel to soften.

Serve.
