2 teaspoons vegetable oil

1 medium red onion, finely chopped

2 large cloves garlic, minced

1 400g ( 14 oz ) tin chopped tomatoes

120 ml ( 1/2 cup ) water

1/2 teaspoon agave nectar

1/2  teaspoon smoked paprika

1 teaspoon black pepper

1/2 teaspoon chilli powder (optional)

1 400g ( 14 oz ) tin mixed beans, or fresh cooked beans if you prefer

METHOD

In a saucepan, over a medium heat, fry the onions and garlic until the onions have softened.

Add the chopped tomatoes along with the water, agave nectar, salt and soy sauce and bring to the boil. Reduce the heat, cover and simmer ( on a very low heat ) for 20-25 minutes until the sauce has become thickened.

Add the rest of the ingredients and continue to cook for 2-3 minutes for the beans to heat through and for the spices to impart their flavours into the dish. Adjust seasoning and serve.
