Sweet potato and earthy spinach is a match made in heaven. This is a wonderful alternative to mash potato and works well with a Sunday roast or just on its own, in a bowl, and eaten with a spoon for the ultimate in comfort foods.
500 g sweet potato, peeled, steamed and mashed
130 g fresh spinach, chopped
1 teaspoon coconut oil
1 clove garlic, minced
1 tablespoon lemon juice
1 teaspoon vitalite, or other vegan spread
Salt and pepper to season
Heat the oil in a pan, over a medium heat. When hot, fry the garlic for a few seconds before adding the spinach and cooking until the spinach has completely wilted.
Add the spinach to the mashed sweet potato along with the lemon juice and vitalite. Mash everything together well and season with salt and pepper to taste.
