This is a delicious alternative to mash potato with deep and exciting flavours and a wonderful texture. This is great served with any dish but is also wonderful when eaten unaccompanied or with some fresh crusty bread. This is the mash you have been waiting for.
2 tablespoon coconut oil
1 large onion, finely chopped
Small pinch salt
1 small head ( Approx 700 g ) white cabbage, chopped
2 large baking potatoes, peeled, steamed and mashed
5 tablespoons soy sauce
100 ml water
2 tablespoons nutritional yeast
1/2 teaspoon black pepper
1/2 teaspoon thyme
Add the coconut oil to a pan, over a medium heat, and fry the onion with a pinch of salt until the onions have softened.
Add the cabbage and soy sauce and stir fry on a high heat for 5-10 minutes so that the onions and cabbage can start to caramelise.
Add the water, stir well and turn the heat to low. Cover and continue to cook until the cabbage is tender.
Put into a large bowl with the potato and all other ingredients. Mash together well and transfer to a baking dish. Drizzle with a little oil and bake for 30 minutes until golden brown.
